So last night, Diana made a batch of these: Almond Flour Ginger Snaps. I don’t care if you follow SCD or not… these things are delicious!!!! That they are SCD-legal is just a bonus, as far as I’m concerned! I’ll warn you now, though. They are incredibly rich. Eat more than a couple and expect the ooginess! So worth it!!

They were super easy to make. The only tricky part was that halfway through the baking, they need to be flipped (though I’m told by Comfy Belly herself that the flipping is purely optional, and is only to create a crisper cookie).
