In my recipe a few days ago for a Zippy Melon and Cucumber Salad, I discussed riffing and how that recipe came about as a result of it. In that spirit, I riffed yet again on it and came up with a really nice Summertime salad.
Instead of melon, we used 2 kiwi fruit and a couple of fresh nectarines. It made for a nice combination of flavors and textures. We also used one of our favorite new discoveries: Armenian cucumber. These babies are HUGE! They have a light, citrusy flavor, a really satisfying crunch and a meaty, substantial texture. They aren’t wet and juicy like regular cucumbers, but a little dryer and a little more substantial. If you come across some, you owe it to yourself to give it a try… don’t be put off by it’s weird appearance. Just use it like a regular cucumber. We found them at our local farmer’s market for $1.50 each. I don’t know how the skin tastes… we peeled ours.
Of course, because they are so big, we just used one and still ended up with a ton of salad! Also, if you use the dressing recipe from the melon and cucumber salad, you may find yourself making a double batch. It’s easy to make though, so you’re probably better off making a single first and then making more if you need it. We paired this salad with broiled albacore tuna loins… it really was a perfect Summer dinner!
