I mentioned last week that we were making our own corned beef using only SCD-legal ingredients, and promised a follow-up.

We didn’t wait the whole 10 days to brine the brisket.  It just ‘looked done’, so we went ahead and boiled it up today, after about 8 days of brining.  In a word:  AMAZING!!!  Seriously.  This is way better than any corned beef I’ve ever bought.  And as a bonus, the house smells delicious!  If you’re a corned beef fan, be warned… if you make this, you may find yourself suddenly dissatisfied with any other corned beef, so approach this with care.
